Dana Riccobono VP of Operations, Bocce & SUGARCANE raw bar grill
An effervescent and vital member of the Samba Brands Management (SBM) family for over ten years, Dana Riccobono ensures that the highest quality services are delivered to Bocce and SUGARCANE raw bar grill guests every day and night. Dana’s journey to her role as SBM senior executive can be traced back to a local trattoria in her hometown of Orangeburg, NY in Rockland County. Her experience as a server and manager there paved the way for a career at the Grand Hyatt in Manhattan. One of Manhattan’s busiest midtown hotels, she moved from cocktail lounge floor manager to a key manager of the location’s upscale steak house. A stint at the world-renowned Rainbow Room followed. Dana moved to Miami to oversee construction and open SUSHISAMBA Miami Beach. With her hands on, roll-up-your-sleeves approach, Dana has also been directly involved in floor-to-ceiling build-outs of SUGARCANE raw bar grill and Bocce. Whether deftly managing profit and loss reports, managing her team of General Managers and staff, or planning the next PR-worthy menu item, Dana is always on it. She is looking forward to spearheading future roll-outs of the SUGARCANE raw bar grill brand and the continued growth of Bocce as a favorite in midtown and beyond. Not surprisingly, Dana is also a die-hard foodie – albeit a pescatarian. Favorite Bocce dishes include: eggplant parmigiana, roasted cauliflower and pizza; and at SUGARCANE raw bar grill, the scallop crudo, Japanese eggplant and torrejas can’t be missed.
